Spring Recipe: Soft Brunch Scramble Sandwich

Soft Brunch Scramble

Ingredients:

  • 8 spring onions
  • 3 Tbsp. unsalted butter, divided
  • Kosher salt
  • Freshly ground pepper
  • ¼ cup white wine vinegar
  • 1 cup fresh ricotta
  • 1/4 cup finely grated Parmesan
  • ½ lemon
  • 1 small garlic clove
  • 25×5″ pieces focaccia
  • 4 large eggs, beaten to blend

Instructions:

  1. Preheat oven to 350.
  2. Wash and dry all produce. Trim edges of spring onions, separate whites from greens, and slice bulbs in half. Cuts off the woody parts of the greens and slice the tender greens into 3″ pieces. Keep separate from the bulbs.
  3. In a large skillet, heat 2 tbsp butter. Add onion bulbs, coat in the butter, and season with salt and pepper. Cook until softened and golden brown, stirring frequently — 4-5minutes.
  4. Add vinegar, onion greens, and 1/2 cup water. Cook until liquid has reduced and bulbs are jammy. 6-8 minutes.
  5. Remove from the skillet and wipe out.
  6. While onions cook, combine the ricotta and parmesan. Season with salt and pepper. Zest the lemon and add to the ricotta mix along with the garlic. Stirring to combine.
  7. Set the focaccia in the oven on the rack and heat until softened — 2-3 minutes.
  8. Divide between the plates and add the ricotta mix on top.
  9. Melt 1 tbsp of butter over medium-low heat in a skillet.
  10. Add eggs, season with salt and pepper. Stir constantly with a spatula while the eggs cook, using a figure-eight motion to make the eggs form soft, creamy folds as they cook — 1-2 minutes.
  11. Divide and add the eggs to the focaccia and ricotta mix.
  12. Top with onions and serve hot.
